Crowned the ‘Egg Master of Sydney’ and ‘creator of avocado toast’, Bill Granger is renowned as the restauranteur who brought laid-back Australian cafe culture to the world, and is beloved by family cooks and culinary sophisticates alike.
The empire that is ‘bills’ began with the original Darlinghurst street-corner cafe 26 years ago and is credited as the first place anywhere to put the now-iconic breakfast of avocado toast on the menu. Since then, from Sydney to Tokyo, London to Seoul, people around the world have queued for a taste of his absurdly fluffy ricotta hotcakes and creamy scrambled eggs, and fallen in love with this sunny, relaxed, and very Australian way of eating.
Ahead of his new book release, Australian Food, Bill Granger talks with food writer Adam Liaw to celebrate the global phenomenon of Australian cafe culture, the evolution of a national cuisine and the uniqueness of Australian food.
